The relationship between food and healthcare can be challenging to explain. We all need food, but eating too much or too little of the wrong types of food can negatively affect our health. There are many views on the food we eat and their link to various diseases.

Tatiyana Giddings meets with Megan Settlemyer, an Outpatient Dietitian, to learn more about oncology nutrition and to find an answer to a burning question she's had all these years regarding sweet potatoes and their relation to cancer prevention. Brian’s Sweet Potato Burrito Recipe, Inspired by Lucky Peach Presents Power Vegetables!

Makes 4 Servings
1 ½ Ib sweet potatoes, peeled and cut into ½” cubed pieces

1 T vegetable oil (avocado oil preferred)

1 t kosher salt

¼ t freshly ground black pepper

2 t chili powder

¼ t ground cumin

¼ t ground coriander

½ t oregano

+ pinch ground cinnamon

+ pinch ground cloves

Your choice of tortillas, but if you would like to forgo tortillas, it will make for a great substitute for protein in a salad.
 

1 Heat the oven to 400°F. Line a baking sheet with parchment paper.

2 Combine the sweet potatoes, oil, salt, cumin, chili powder, coriander, and black pepper in a bowl and toss to coat. Arrange in a single layer on the lined baking sheet and roast until tender and caramelized, about 30 minutes.

3 Assemble the burritos.
 

Options for toppings or choose what you prefer

+ Cooked rice

+ Cooked beans

+ Salsa

+ Avocado slices

+ Pico de Gallo

+ Sour cream

+ Shredded cheese

+ Cilantro

+ Thinly sliced iceberg lettuce

+ Pickled jalapeno chilies

Visit with JPS Oncology Patient

Timothy Clark is a JPS Oncology patient with stage 3 Liver Cancer. Part of his treatment has a lot to do with the food he eats. Clark has to eat as much as possible to maintain a healthy diet but wants to do it responsibly. In addition to his impossible meat substitution, he has started a garden in his yard with various vegetables, including his favorite, beans.
